doesn't it seem odd that solid snake, or should I say "old snake" is the only character that has aged since the last metal gear games??

It's been explained in a few interviews. The reason Snake looks older is that the technology used to clone he, Solidus and Liquid is imperfect. After a while, the genetic material begins to break down much more quickly. That and the fact that he is still infected with FoxDie.
